Well I *had* a list with pictures of various third wave coffee beans when I still had a subscription to trade coffee (I cancelled it after I kept getting beans that I could buy at Whole Foods for less), but after the website crashed and had to be replaced, I lost the table with the list. To some extent, I can remember what I’ve tried, but I have to say that about a year or so of trying a new bag q4-8 weeks, I’ve settled on HEB’s Cafe Ole Texas Pecan beans. They are super oily, so I have to use the baratza external grinder (they WILL get stuck in your BBE’s grinder, 0/10 do not recommend), but wow the flavor is just phenomenal, the price is right, and it’s a crowd favorite. I one time took this coffee to a tennis match, and my opponent even complimented the smell of the espresso. Grind it fresh and try it–you won’t be disappointed. They even make a decaf version, if you’re into that.
